Want to add more good bacteria to your gut? Making your own sauerkraut is super easy and way cheaper than buying at the health food store. The longest part is waiting for it to ferment.
You will need:
- 1 head organic cabbage
- salt
- large mason jar
- small mason jar that fits into the mouth of the large jar
- large bowl for 'squeezing'
- small tool for 'pressing' such as a narrow stirring spoon
Instructions:
- slice the cabbage into thin strips and place in bowl - reserve one of the whole outer leaves to fold up and place at top of jar
- sprinkle about 3T of salt on the cabbage strips and mix
- let sit for about 10 minutes
- using some elbow grease, begin squeezing as much water as you can out of the cabbage
- place the cabbage and its juice into the large mason jar and press down with spoon or other object so that the air escapes and juice covers the cabbage
- fold the whole leaf and place atop the other cabbage, press down again to make sure covered by juice
- fill the small mason jar with water, put a lid on it, and set it the mouth of the larger jar with the cabbage to keep the cabbage down and juice above the cabbage
- place in cool, dark, dry place for about 3 weeks
